Before becoming a chef, Jean Yves was an architect. This background taught him discipline, precision, and attention to detail — qualities he naturally transferred to the kitchen. For him, each dish is a construction: a structure of flavors, textures, and emotions, designed as a fleeting work of art.
Originally from Vietnam and trained in France, his cuisine reflects his identity: a fusion of Asian traditions and French techniques. For over 25 years, he has traveled across Asia exploring the culinary cultures of Vietnam, Thailand, Cambodia, and Laos. These rich influences inspire every creation he serves today in his workshop in Paris.
Having won a major televised culinary competition, he decided to turn this recognition into a project that truly represents him: offering unique, intimate culinary experiences designed to bring people together around the table.
What matters most to him is sharing his passion. He aims to reconnect people with food — not just to eat, but to understand, feel, and share. A well-crafted dish can tell a story, awaken a memory, and create bonds. This is the magic he strives to offer every guest.
