The Truffle Menu is a tribute to the black truffle, elevated through a fine dining experience designed for those who seek excellence and subtlety.

Offered exclusively in-season, this rare menu explores truffle in all its expressions — raw, infused, shaved, emulsified… Each dish balances the deep aroma of truffle with the light, precise structure of my cuisine.

Across 7 to 9 courses, the journey includes:

  • A delicate truffle-based amuse-bouche
  • Sophisticated pairings with noble ingredients (scallops, slow-cooked egg, free-range poultry, dry-aged beef…)
  • Silky textures and precise sauces
  • A signature dessert with an elegant and unexpected truffle note
